Nadaman
Since 1830, Japan’s famous Nadaman restaurants have been treating discerning diners to fine kaiseki – traditional multi-course Japanese meals analogous to Western haute cuisine. Here in Hong Kong, Island Shangri-La had the privilege of creating the first Nadaman outside of Japan, and the elegant presentation and delicate tastes that comprise this historic dining tradition have attracted patrons ever since.
Located on level 7 of the hotel, Nadaman features separate teppanyaki, sushi and a la carte dining areas, as well as private rooms.
Chef Kenji Yanagita prepares Nadaman’s renowned fare with special attention to harmony and restraint, in keeping with the restaurant’s proud tradition of serving the best in Japanese cuisine. One of the highlights of the menu is the nine-course Kaiseki meal, which, as explained by Yanagita, “is the art of transforming the blessings of nature into food.”
Standout items on the appetiser menu are Chawan Mushi (steamed egg custard) and Agedashi Tofu (deep-fried bean curd with crab meat sauce). Popular main courses are the Steak kaiseki set meal and Chirashi, a selection of premium sushi served in a lacquered box. Desserts feature the likes of black sesame ice cream and Japanese musk melon.
