Revolution at The Dorchester

Britain’s reputation for good food is precarious. The British traditionally do ‘words’ a lot better. Ask for sauce on your meat, and you often get two options; “red” or “brown “ – both options awake with poetic possibility, insinuating something beyond the reaches of the palate.

It’s precisely the elusive quality of our food that makes it so charming, and on frequent occasion, spectacularly unpopular. But, hail The Dorchester for daring to flirt with this reputation, and for their aspirations towards the beautiful, in both word and the meaning conveyed therein. Ex-Rhodes W1 chef Brian Hughson is at one with this hidden destiny, and his libido for all things British simmers brilliantly against a backdrop of checkerboard Scottish upholstery, lampshades, and Gibsonesque warlord murals.

Put simply – The Grill at The Dorchester has the punters raving. The Chef’s masterclass demonstration is an a la carte menu that has the capital’s bon-vivant’s scuffling along the marble-paved cloisters before flinging themselves down in front of Hughson’s elegantly seared scallops with sardine ‘pie’ and cauliflower purée. His signature dish is a finger up at all the European promiscuity going on outside. Aside from this inciting incident, go there for the following major chord combinations: Carpaccio of Angus beef with steak tartare, gremolata and sourdough croutes; sea bream with garlic and shallot confit, clam vinaigrette and poached Scottish langoustines; and melt-in-the-mouth pork belly with electric crackling, pork fillet and tulle-licks of mash.

With a heaving dining room even in January, an ambience singularly fresh and unimposing – business schmoozing and high-profile luncheons are refreshingly bohemian in nature – and a wine-list heart-achingly fashioned by wine master Christian Stivert, we shove a fork in the amuse bouche of asparagus velouté and foam…and groan – ‘if food be the music of love, play on’.

Country Chic Returns

At a glittering party at The Dorchester the other night, the great and the good assembled to find out about the forthcoming launch of the Dorchester Collection’s first country house hotel, Coworth Park, situated just outside Ascot in Berkshire. Guests sipped Veuve Clicquot and elderflower cordials and were served a selection of English canapes including miniature Scotch eggs, smoked salmon blinis and miniature Victoria sponge as full details of what to expect from Coworth Park were divulged.

Given that the Dorchester Collection has long been synonymous with high-end luxury, mixed with intimate and personal touches of service, it came as little surprise to find that Coworth Park is intended to shake up expectations in a way that only the excellent Lime Wood has recently managed to. Rooms and suites will include the converted Dower House, featuring three lavishly decorated bedrooms with sculptural four-poster beds, as well as suitably stylish ‘normal’ rooms.

Gourmets will be eagerly rubbing their hands together at the planned fine dining restaurant, which will be showcasing the talents of the double Michelin-starred John Campbell, who attained fame for his excellent cooking at The Vineyard At Stockcross. Campbell was on hand at the event showcasing some of the fantastic canapes that he has come up with, and there was more than a touch of Blumenthal-esque molecular gastronomy in test tubes full of a ‘BLT’ – a thin gelatinous layer of bacon foam, complete with tomato consomme and lettuce cream. It looked unimposing, but tasted divine, which bodes well for his new restaurant.

The hotel is opening in late August 2010, and, judging by the more than enthusiastic reactions from those who attended the event, it promises to be a glittering success. For more details, visit http://www.coworthpark.com/

2010 – The Year Ahead In Food

2010 is finally upon us, and is promising to be a good year in food. Towards the end of January, we do of course have the Michelin lists for the UK to look forward to, and the results will be as eagerly anticipated as ever. Alain Ducasse at the Dorchester is hotly tipped to upgrade from it’s “Rising Three” star status to become the second London venue to hold three stars. Apsley’s, under the guidance of Heinz Beck, is also tipped to receive recognition – from my own dining experiences at Apsley’s this will be a very well deserved award if successful. There are always a couple of surprises and it will be very interesting to see what’s in store for this year.

Moving on, 2010 promises some fantastic openings around town, such as the imminent launch of Gordon Ramsay’s Petrus, which has only existed in name since Marcus Wareing took over the helm at the Berkeley some time ago. Likewise, the Mandarin Oriental in Knightsbridge, featuring restaurants by highly acclaimed Brit superstar Heston Blumenthal and the 165 seat Bistro from NY super chef Daniel Boulud, promises a double delight for destination dining.

The French remain masters, and so Roux at Parliament Square, a new restaurant from Michel Roux Jnr in the Grade II listed premises of the Royal Institution of Chartered Surveyors. will provide an interesting option. Panoramic views over Westminster Abbey and the Houses of Parliament, on top of the great cuisine, will enhance its status as a true destination restaurant.

Looking to the East, a second branch of Hakkasan in Mayfair is certainly a bold move. However, given the success of the two Nobus in such close proximity, it’s not such a bad idea. A relaunch of the short-lived but popular Kyashi on Upper St Martins Lane will offer a sushi bar under the watchful eye of chef Jacky Yu, as well as a more formal dining area with a champagne bar on the mezzanine level for some chilled drinks.

There is plenty more to come, including the long-awaited relaunch of the Savoy Hotel and its restaurants. Considering all this, it may just be time to get that cheap gym membership in place so that you can enjoy the boundless amount of culinary delights in store.

China Tang – the ultimate in Eastern promise?

China Tang has an enviable reputation as one of London’s most glamorous and celebrity-filled Chinese restaurants, and it isn’t at all hard to see why. When you enter the establishment, the atmosphere is equal parts 30s Shanghai exotic chic and up-to-the-minute metropolitan style, with some quirky touches thrown in to surprise and delight, such as the recordings of actors reading poetry in the loos. The fabulous bar is also well worth a visit, to sip on a sumptuously prepared Singapore Sling or Pineapple Julep and cast an eye over the beautiful people around the place.

Nonetheless, this experience is very much about the food, as it should be. A couple of dim sum make an ideal bite to start, perhaps with a glass of Louis Roederer, as such dishes as prawn cannelloni and roast pork buns act as the perfect hors d’oeuvre to a memorable dinner. Depending on how experimental you want to be, either choose from chef recommendations such as suckling pig platter and salt and pepper lobster claw, or go for more familiar favourites such as excellently cooked stir-fried beef in black pepper and the set-piece favourite of classic Peking duck. Whatever you order, it’s sure to be excellent.

It’s also well worth venturing through the extensive wine list, which offers a superb selection of both Old and New World wines, and the ever-obliging sommeliers are on hand to guide you through the perfect bottle to accompany your meal. If you want to go somewhere and be made to feel special, China Tang is ideal.

British class and sophistication at The Dorchester’s spa

The Dorchester Hotel has always been synonymous with a certain classically British feel, and the newly refurbished spa has been designed in a 1930s art deco style imbuing it with a cutting edge vibe.
