Pedro Ximenez is a variety of white grape that is adapted to the climate and cultivating conditions of the south of Spain. It is only a slightly pigmented grape, so the mahogany colour of our wine is acquired, partly, by laying them out to dry in the sun, a process known as "soleo". After the harvest, the fruit obtained is dried by a natural process. Thanks to this process the sugars, acids and mineral salts develop a wine which is dense and luscious but not heavy to the palate.
